French Toast

I think I've posted a couple times about french toast, except this time we used cinnamon kosher bread. Very thick, sweet, cinnamon slices that resemble Brioche or Challah. Completely changed the dish... or the french toast game for that matter. It was almost like eating bread pudding, but in a more solid state.

YUM!

Change up your french toast with other fancy breads.!

Fried Tofu with Spicy Asian Veggies

Dinner tonight I made Fried Tofu with some spicy veggies.

Tofu
- Extra Firm (pressed with paper towels for 20 min to remove water)
- 1/2 c Panko Flakes
- 1 tsp Smokey Paprika
- 1 tsp Cayenne Pepper
(combine the Panko, Paprika, Cayenne Pepper in one plate)
- 2 Eggs
(wisk the 2 eggs in another plate)

Sauce Mixture
- 1/2 c chicken broth
- 1 tsp corn starch
(Mix these two first then add the rest as follows)

- 1 tsp crushed red pepper flakes
- 1 tbsp Soy Sauce
- 1 tsp sesame oil

Veggies
- Baby Corn
- Mushrooms
- Snow peas
- Bean Sprouts
- Chinese Broccoli
- Diced Red Peppers
- 1 tbsp Minced Garlic
- 2 tbsp Minced Ginger
- 1 tbsp Minced Chili Pepper

Chilango!

One of my favorite new sit down restaurants is Chilango.

The food is very fresh, organic, and with free-ranged meats you can't go wrong! Everything is handmade and fresh that day.

We started with the duck flautas. They were amazingly delicious and very moist! I was very surprised because usually duck can get very greasy or stringy. The flavors were amazing. A must have if you try this restaurant. For the main course, my husband had the Filet Mignon tacos and I had the Carnitas.

The tacos were cooked to perfection and full of flavor. To add as a side (Pictured off to the side in the upper LT hand corner) were the picked peppers. SO GOOD! It was mixed with some chiles, carrots, and garlic. I suggest you get these. They were hot and spicy and perfect with everything we ate.

The carnitas were crispy, soft and fresh. FRESH FRESH FRESH! This being a higher end, sit down restaurant I love the fact that everything isn't super salty. I love my mission burritos, but it is nice to have some food that doesn't just lay in your stomach all day.

I suggest you get the 1/2 lbs of carnitas and share them with friends. It was a lot of meat even for my husband and I to share!

They were accompanied by a side of guacamole, picked onions and a small array of salsas. I loved the smokey flavor of one of them. They were sooo good. Must go back for them!

To add, I had their sangria of the day. It was very smooth. Not bitter at all. I was surprised since most sangrias are very hard to drink for me. I only had a glass, but they also serve the sangria in a pitcher.

To end the meal we had FRESHLY MADE CHURROS! Actually you can get the churros with a mexican hot chocolate dippy thingy. But with all the previous food I didn't have room for that.

So if you are coming to the city and want a good sit down restaurant with prices similar to Chows, try Chilango. We will definitely be going back to try their other specials!

Reading Produce Stickers

Something interesting I read recently. I don't remember where. Maybe in a food magazine or a newspaper article where it describes how to read the PLU (price look-up) numbers on fruits and veggies. I've only been aware of these numbers since we began doing self checkout at our local Safeway (chain grocery store) in San Francisco. When you type in the number on the sticker, say on Banana's, you see a number that will say #4011 or something like that.

When a number begins with a 3 or 4, those are conventionally grown produce.
When a number begins with a 9, that usually means it is organically grown.
When a number begins with an 8, those are genetically altered produced.

How interesting eh? now I'm going to pay closer attention to those fruits & veggies that I buy.

Red Velvet Cupcakes!

The reaction of acidic vinegar and buttermilk tends to better reveal the red anthocyanin in the cocoa. Before more alkaline "Dutch Processed" cocoa was widely available, the red color would have been more pronounced.

I had a craving for some delicious Red Velvet cake with cream cheese frosting. You can't beat them if you want both chocolate and vanilla deliciousness!

So I found some recipes online and synthesized them into the following:

Dry Mix

2.5 cups of cake flour
1.5 cups of sugar
1 teaspoon of baking soda
1 teaspoon of baking powder
2 teaspoon of cocoa powder (you can also use 1 t if you want less cocoa flavor)

Wet Mix

1.5 cups of veg oil (or you can also use a 1/2 a cup of melted/room temp butter)
1 cup of buttermilk (room temperature)
2 large eggs (room temperature)
2 Tablespoon of red food coloring (or beet juice)
1 teaspoon white distilled vinegar
1 teaspoon of vanilla extract

Cream Cheese Frosting

1 pound of cream cheese, softened
2 sticks of butter, softened
1 teaspoon of vanilla extract
Top with pecans, raspberries, or strawberries for garnish!

DIRECTIONS

Preheat oven to 350 F.
Line pans with cupcake papers. (I like using the foil ones)
Sift together the dry mix in a bowl
Mix together the wet mix in a hand/stand mixer
Add the dry to the wet mix by slowly incorporating the dry to the wet in 3 batches
Mix till smooth
Fill each cupcake liner up to 2/3rds full
Bake for 20-22 minutes (depending on your oven!)
Turn pans half-way through for evenness
Test the cupcakes with a toothpick or dry spaghetti pasta. If no cake is on there, they're done!
Let cool for 15minutes before frosting. Cake must be cool or the frosting will melt!

For Frosting:

For frosting use the hand/stand mixer and beat the cream cheese, butter, and vanilla till smooth
Add the sugar and incorporate till fluffy.
Garnish and enjoy!

Cute little cupcake shop located in Union Square. The cupcakes were yummy, but not spectacular. It's better than something you may get mass produced. Everything looks very handmade and was a nice little treat before a concert. They had cookies, cupcakes, mini cupcakes, and served lunch boxes as well as catering. Go to their website for more info.

This was surprisingly yummy. It reminded me of Pork Palabok which is a type of Pancit or Rice Noodle dish. Of course it didn't taste exactly like it, but the textures and *non-fishy* flavor made me happy. yay!

This one is a bit more western of course. It is made with spaghetti noodles, toasted garlic, red pepper flakes infused into the olive oil, bread crumbs, fried egg, parsley and Parmesan for garnish. The slightly cooked egg made an amazing sauce, the red pepper flakes made it have a delicious kick, and the crumbs gave it a simple crunchy contrast to the chewy/al dente pasta. YUM YUM YUM!

Patio Filipino

Patio Filipino in San Bruno was a wonderful place to find. I usually go to Ongpin, but now that there are more restaurants available to Filipinos, I suggest that all of them in the Bay Area come here. Supposedly it is more Spanish, but damn it... it tastes good! I was so happy to finally have good service and an organized/clean environment. For those of you who don't dine at Filipino restaurants the experience is usually a dirty restaurant with bad service but good food.

Vegetable Lumpia

The vegetable lumpia was stuffed full of fresh veggies, crispy wrappings, and a wonderful plate setting. I do have to add that all the plates matched. HAHAHA!!! Oh gosh! How can I go back to other Filipino restaurants now???

Lechon

We didn't order Adobo Manok (chicken) like we usually do because it is rare for me to get Lechon. The fat, skin, and meat were perfectly cooked. The skin was super thick and crispy, the fat was lushous, and the meat was moist and tender!

Tofu Sisig

Tofu Sisig. Sisig is traditionally bar food but I love the damn stuff.
Usually made with pork ears and innards, I loved the fact that this place makes tofu dishes! It isn't as heavy, so it was a nice change.

It was wonderfully crisp and delicious. I was actually wishing it was bigger. XD !!!

I love this place and plan to go back. I hope to take my parents or even my friends here.

Eggplant Parmesan

This recipe is slightly adapted from America's Test Kitchen: Cooking for Two 2009. Some measures have changed to accommodate the size of the eggplant I used. I have always been someone who cooks in large portions. I feel it is just cheaper, and easier to cook that way. Cooking for two is a little more challenging. I have to always measure things in very odd ways. Usually I "fake it" and attempt any recipe with an approximation and my own personal taste.

When I saw this magazine, I was drawn to it. BAM! I bought it and made their Grilled Chicken Fajitas, Pan Roasted Chicken with Vegetables, and their Eggplant Parmesan (above and below). They all came out delicious!

The Eggplant Parmesan was fairly easy to do, but took a lot of prep time.
TOMATO SAUCE

1 (14.5 ounce) can whole peeled tomatoes. Drained, juice reserved
1 T olive oil
1 garlic clove (I used 2) minced
1/4 t table salt

EGGPLANT

4 slices of sandwich bread, torn into quarters (I used 5 slices)
1 1/2 ounces Parmesan cheese, grated
salt/pepper
2 Large Eggs (I used 3)
1/2 Cup unbleached all-purpose flour
1 small eggplant (12 ounces) sliced into 1/4th inch slices. (circle pieces not lengthwise).
1/2 cup of vegetable oil
4 ounces mozzarella cheese (1cup) shredded
1/4 cup chopped fresh basil

2 Pie Plates
1 10-12 inch skillet (all metal)
1 Wire Rack (I used a large cooking rack the size of a baking sheet)
1 Baking Sheet

SAUCE
Make sure you have about 1-2 Cups of sauce. If you need more, use some of the reserved juice.
Process all the sauce ingredients, and set aside.

EGGPLANT
1. Clean and prepare the veg.
2. Pre-heat oven at 425 degrees. Process the bread till fine crumbs. (4-5 Cups). Place in pie plate. mix in 1/2 cup of Parmesan, 1/4 teaspoon salt, 1/4 teaspoon of pepper.
3. Beat eggs and place in second pie plate.
4. Combine the flour, 1/2 t pepper in a large zip-lock bag. Place eggplant slices in the flower mixture and shake till all is covered. Make sure every piece is covered and not stuck together!
5. Remove each piece, coat each eggplant in the egg mixture, and then the bread mixture. Press into the bread mixture to make sure it is stuck onto the eggplant. Place each on the wire rack that is on top of the baking sheet.
6. Heat 1/2 Cup of veg. oil in the skillet on med/high heat until simmering. Cook well until brown. About 1-2 minutes on each side. Make sure pan is relatively clean. If burn pieces are left in the pan, pour oil out in a heat safe container, wipe down with paper towels, and add fresh oil. Placed cooked pieces on the wire rack.
7. When finished cooking all of the eggplant, clean out the oil and place 1/2 C or 1 C of sauce into the pan. The sauce may sizzle a bit. Just wait for it to stop bubbling. Place the pieces of eggplant in a layered, circular pattern till you reach the center. Kind of like a deck of cards spread out in a circle. Place the remaining sauce on top of the eggplant. Sprinkle the rest of the Parmesan and Mozzarella leaving about 1 inch of empty space on the outer part.
6. Transfer skillet to the oven and bake until 15 minutes. The cheese should be slightly brown and crispy. Serve with fresh chopped basil after 5 minutes of cooling.

I made a small size of Rotini with Garlic and Basil.
1. Heat up a small amount of pasta per instructions on the box. (I used 2 cups of rotini)
2. When pasta is done, drain (reserve 1C of pasta water) and set aside. (If the pasta sticks together, use the reserve water to separate the noodles.)
3. In the same pot, heat 1/4 cup of olive oil.
4. Minced 4 cloves of garlic. (You can use 2 if you aren't into that!)
5. 1t of Crushed Red Pepper.
6. Place the garlic/pepper in the oil for 30 seconds.
7. Turn off the heat, add the pasta, and toss with salt/pepper to taste
8. Top with fresh chopped basil

* 1 cup half-and-half (I used heavy whipping cream)
* 3 large eggs
* 2 tablespoons honey, warmed in microwave for 20 seconds
* 1/4 teaspoon salt
* 8 (1/2-inch) slices day-old or stale country loaf, brioche or challah bread (Used regular sandwich bread)
* 4 tablespoons butter

Directions

In medium size mixing bowl, whisk together the half-and-half, eggs, honey, and salt. You may do this the night before. When ready to cook, pour custard mixture into a pie pan and set aside.

Preheat oven to 375 degrees F. Dip bread into mixture, allow to soak for 30 seconds on each side, and then remove to a cooling rack that is sitting in a sheet pan, and allow to sit for 1 to 2 minutes.

Over medium-low heat, melt 1 tablespoon of butter in a 10-inch nonstick saute pan. Place 2 slices of bread at a time into the pan and cook until golden brown, approximately 2 to 3 minutes per side. Remove from pan and place on rack in oven for 5 minutes. Repeat with all 8 slices. Serve immediately with maple syrup, whipped cream or fruit.

(I dusted them with cinnamon/sugar, and homemade whip cream/blueberries)

These came out terrific! They were toasty/crispy on the outside and soft on the inside. Yum! XOXO

When I want Filipino food and can't get it from my parents I usually get it at Ongpin. It is as close as I can get to non-fast food type. Growing up on this stuff, I expect it to be a certain level of yumminess. Now, Ong Pin is pretty good, but their customer service is utter-utter-utter crap.

There have been many times I've been treated like I wasn't one of their people. It isn't my fault I don't eat fish or coconut. I'm allergic. And if I ask if it was possible to have it without coconut, don't look at me like I'm crazy. There have been other times where we were seated and waited almost a half an hour just for someone to give us menus.

It is sad, but true that this place is where I like to get my food, but at times I hate the fact that they are not up to par on many things.

How can something fried be wrong?

Chicken Adobo (chicken chunks braised in a flavorful garlic-vinegar mixture)
Very yummy. Though from what I hear it is just average. You have to also remember every Filipino has their own recipe for Adobo in general. So everything is made to taste.

My note is to go and get things to-go or catering.

Burger Recipe from Julia Child

* 1 tablespoon minced shallots
* 1 teaspoon butter or mild olive oil
* 1 to 1 1/4 pounds fresh ground beef (preferably 15 to 20 percent fat)
(we used 80%)
* Kosher Salt
* Freshly ground pepper
* Condiments
* 1 red onion, sliced very thin
* 1 tomato, sliced thin
* Iceberg lettuce leaves
* Small whole pickles
* Thin cheddar or Swiss cheese slices (I used white cheddar)
* Bacon strips, cooked crisp (optional)
* Butter, at room temperature
* Ketchup
* Mayonnaise
* Dijon mustard

In a small saute pan, over high heat, saute the shallots in the butter until soft, about 5 minutes.

Divide the meat into 4 portions. One at a time, mold each by chopping and spreading the meat with light strokes of your chefs knife.

Season each with salt, pepper and 1/2 teaspoon of the shallots.

Blend into the meat, chopping and turning it as you shape the portions into 1" patties.

Lightly dust the surface of a large, hot saute pan, with salt.

When the pan is very hot, but not smoking, lay a patty in the pan. Rapidly add a second burger. Brown the meat. 2 minutes on one side and 2-3 minutes on the other.

If you like melted cheese place your choice of cheese for the last 1-2 minutes on the flip side.

Remove cooked burgers to a warm platter. Repeat process with 2 remaining burgers.

Put together and enjoy!

Street Food Fight

Today I read an article in the NYT about food trucks and street vendors fighting it out for the right to sell their food in certain areas. I find this ridiculous. If your food is crap people won't buy it. If your food is good, people will flock to you- period. Of course there are going to be people who have been on certain corners for many years, but if people don't want your wears, you can't force them. The article focuses on Street Sweets food truck, a mobile trove of croissants, cupcakes and cookies. (http://www.streetsweetsny.com)

People want good or even better food. Competition is always healthy. We don't have many food trucks in San Francisco, and I am pretty sure we would love the Street Sweets mobile bakery if there was a possibility of one here. Recently for lunch, Kyle and I went to our local El Tonayense Taco Truck and we were very satisfied. They had a 100 health rating and were cheap! You can't beat that! I am not saying we don't have decent restaurant style taquerias, I'm just saying that people will flock to the food if it is good. So fighting over space is just plain silly.

You can see here what Street Sweets have to deal with sometimes. It is just childish.

Early this morning, yes even in the morning, I dream of sweets. MMM... sweets... Anyways, I searched the internet for some basic chocolate cake recipes. One recipe that stood out was from Just Call Me Martha. Her adapted Ultimate Chocolate Cake was not just visually delicious, but had a very true point added to it:

The importance of being nice. It was gentleness and kindness, not force and aggression, what got some of the 9/11 terrorists to confess. Did you know that?! I didn't! Apparently, Bin Laden's bodyguard spilled the beans after the interrogator gave him cookies. COOKIES!!! We're talking top terrorist minds, that I'm assuming know a thing or two about keeping secrets, letting lose in response to their favourite treat. I guess, a sweet tooth really can do you in!! This just confirmed what I've always thought: a smiley face and a tender approach gets you much further than violence or harshness. In my view, if you have to resort to unkind behaviour, you have lost control of the situation and yourself, you're closing doors and burning bridges; losing the war, even if you win the battle (man, I'm metaphorical today!) I have gotten along with almost everyone I've ever met, only very few people have been mean to me, and I'm convinced this is because I have been nice to them first (not because of my ravishing beauty!) Sometimes you have to take the first step, and even if its greeted sternly, it's worth to persevere.... Going back to the sweet treats part, they say the way to a man's heart is through his tummy, but I argue that's not gender-specific. Make something with love, present it to anyone and I guarantee you will have made a friend. So, wishing I make good friends with you today, I give you The Ultimate Chocolate Cake. Much has been written about this Gourmet recipe, but I will simply say: it is, by far, the best chocolate cake I have ever had. Try it... I think this will be the beginning of a beautiful friendship!
PS: I arrived at this recipe through Smitten Kitchen way before I started the blog. I actually emailed her asking what her favourite chocolate cake was and she replied with this recipe saying "it is so good it should be framed and laminated". I was sold immediately.

I could not have agreed with her more. I have always thought back and wondered why certain people have treated me less than human. Even when I have gone out of my way to at least give them the benefit of the doubt, all around niceness and was still tramped on. Life is just that way, or maybe they just needed some cake.

Baked Ziti (VEG)

* 1 medium onion, chopped
* 3-4 large garlic cloves, chopped
* 1 28-ounce can diced peeled tomatoes
* 1/4 cup purchased pesto sauce

* 10 ounces ziti or penne pasta (about 3 cups), freshly cooked
* 8 cups ready-to-use spinach leaves (about 2/3 of 10-ounce package)
* 6 ounces mozzarella cheese
* 1 cup grated Parmesan cheese (about 3 ounces)

Preparation

Heat heavy large saucepan over medium-high heat. Add onion and garlic and sauté until glossy and slightly limp- about 6 minutes. Add tomatoes with juices to pan. Simmer until sauce thickens slightly, stirring occasionally, about 10 minutes. Stir in pesto. Season sauce with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to simmer before continuing.)

Preheat oven to 375° F. Lightly oil 13x19 baking dish, or other deep dish. Combine pasta, spinach, 1/3 cup Parmesan and 1/3rd mozzarella cheese in large bowl. Stir in hot tomato sauce. Transfer mixture to prepared baking dish. Sprinkle remaining 2/3 cup cheeses over. Bake until sauce bubbles and cheeses melt, (has nice brown spots on cheese) about 25-30 minutes.

Based on an Epicurious recipe.

For sauce

* 1/4 cup chicken broth
* 2 tablespoons hot bean paste
* 2 tablespoons soy sauce
* Additive-free kosher salt to taste

* 1 lb regular or soft (not silken) tofu, drained and cut into 1/2-inch cubes
* 1 1/2 to 2 tablespoons corn, peanut, or canola oil
* 1/2 lb ground pork shoulder (preferably 75% lean)
* 1 tablespoon plus 1 teaspoon finely minced garlic
* 1 tablespoon plus 1 teaspoon finely minced peeled fresh ginger
* 1 tablespoon cornstarch (or tapioca starch) dissolved in 2 tablespoons water
* 1 1/2 teaspoons Japanese sesame oil
* 1/2 to 1 teaspoon toasted Sichuan-peppercorn powder
* 3 tablespoons thinly sliced scallion

* Accompaniment: steamed rice
* Garnish with finely chopped chili pepper (FOR THE SUPER SPICEY!)
* I like to cook big chunks of onion and red pepper with the garlic and ginger

Make sauce:
Stir together broth, bean paste, soy sauce, and kosher salt. Set aside.

Poach tofu:
Slide tofu into a saucepan of simmering water and keep at a bare simmer while stir-frying rest of dish.

Stir-fry pork:
Heat a wok or large heavy skillet over high heat until hot and add 1 1/2 tablespoons corn oil, swirling to coat. Add pork and stir-fry, breaking up lumps and adding remaining 1/2 tablespoon corn oil if meat sticks, until no longer pink. Add garlic and ginger and stir-fry over moderate heat until very fragrant, about 2 minutes.

Finish stir-fry:
Stir reserved sauce, then add to pork and bring to a simmer. Drain tofu in a large sieve and slide into sauce, stirring gently.

Stir cornstarch mixture and add to stir-fry. Bring to a boil, stirring gently, and cook until thickened and glossy, about 15 seconds.

Turn off heat and sprinkle with sesame oil, Sichuan-peppercorn powder to taste, and 2 tablespoons scallion. Stir once or twice, then serve sprinkled with remaining tablespoon scallion.

A friend of mine wondered what Egg-in-the-hole was and this is pretty much it!
You can eat it with simple salt and pepper or with cinnamon and sugar a la french toast style.

* 2 Slices of Bread
* 2 Eggs
* Salt and Pepper to Taste
* Small Cup/Knife (used to cut hole shape)
* Butter

Spread butter on both sides of the bread. Cut out approx. 2" hole in the middle of the bread.
Save the circles.

Heat skillet/pan and toast one side of the bread for about a minute
Add egg to the middles.
Season with salt and pepper and cook for 2 minutes.
Flip carefully and season with salt and pepper. Cook for 2 minutes.

If you like runny yolks, shorten the time of cooking on both sides.
If you like set eggs cook for longer than 2 minutes on both sides.
Add smoked paprika if you like.

Eat and enjoy!

Things that you Crave

My DH and I had a conversation about what food we crave. Usually I crave very specific things, and usually he does not. I find this odd considering most people I know crave something. Though he did admit that if he saw good Sushi or Dessert he did start to want it or at the least think about it.

On the Food Network channel we were watching something that had to do with meat. I said, "Aww, I would love to eat that." Then my DH shared that there isn't any meat he craved. As stated above he liked the images of Sushi or Dessert, but really there wasn't any meat dishes he thought about. I began to list the things I'd love to eat, though I'm not a big meat eater, I could go for Adobo or Zuni one hour roasted baked chicken. Mmmm!!! I guess you could say he liked food that appeared organized or designed in a certain way. There is nothing wrong with that, but it was just interesting. Which brings me to another point.

Whenever we decide what we want for dinner it usually ends with what I'm craving. There are times where I don't crave something and we end up in a situation where we wait till our answer comes up. It isn't necessarily frustrating, but more of something that is very time consuming. I try to think of things to make my mind go, "YES! THAT IS IT!" but it usually doesn't so we usually end up making left overs or something that is quick and easy to prepare.

Delicious macaron. We had the vanilla and the Pistachio. They are nothing like LaDuree, but they are good. They are mostly thick, and chewy, and delightful to snack on.

Every Miette store is so meticulously designed and arranged. I'm not sure if this location has cotton candy, and I meant to ask. Usually they have unusual flavors, and change it every week/day.

This holiday weekend, Rome was home to Europe’s largest chocolate Easter egg!

In an event sponsored by Euroma2, a mega shopping mall in the EUR district of the city, a 2500 kilogram dark chocolate egg was put on display and then publicly broken with a hammer (see photo above).

Pieces were sold to onlookers and the proceeds will benefit those who affected by the recent earthquake in the Abruzzo region.

Whoopie! Cookie, Pie or Cake, It's Having Its Moment

The basic elements of the whoopie pie turn up in many other snacks that might be considered its far-flung relatives. Amy Emberling, a partner at Zingerman’s Bakehouse, grew up in eastern Canada eating a similar cookie called a Jos. Louis. Oreo sells a whoopie pie look-alike called the Oreo Cakester, while the Hostess Suzy Q is a square version that vies for space on some store shelves with whoopie-esque Little Debbie snack cakes.
Food historians believe whoopie pies originated in Pennsylvania, where they were baked by Amish women and put in farmers’ lunchboxes.
Tired from a morning’s work, the farmers purportedly would shout “Whoopie!” if they discovered one of the desserts in their lunch pails, Ms. Emberling said.
In parts of Pennsylvania, whoopie pies remain a celebrated sweet. The annual Whoopie Pie Festival at the Hershey Farm and Inn in Strasburg, Pa., features a whoopie pie eating contest and the coronation of the Whoopie Pie Queen.
The whoopie pie would probably be Maine’s state dessert, if the state had one. The filling is generally of one of two types: a thick, sweet frosting made from Crisco shortening combined with confectioners’ sugar, or, more conveniently, a dollop of Marshmallow Fluff.
The cake itself is typically not especially sweet, and is often on the dry side, since the frosting lends plenty of sugar and a gooey consistency, said Sandra Oliver, a food historian and columnist in Islesboro, Me.
How the cookies traveled to Maine is a mystery, however.
One theory holds that whoopie pies were brought north during the Great Depression through the Yummy Book, a recipe pamphlet first published in 1930 by Durkee-Mower, the Massachusetts company that makes Fluff.

The closest thing I've had to "whoopie pies" is a cookie ice cream sammie. I guess I could try to make these someday. But these things don't make me want to eat them. They seem too smooshie sounding? (if that makes sense). I love the texture of crunchy cookie with soft/cold center. Something like a soft cake and even softer centers make me feel like I'm eating something weird... like Twinkies??? I'll report back once I've tried one... or two!

I want to make this. I remember my Inang (grandma) making it this way plus another version with cellophane noodles. Maybe I'll try it next week.

Brown about 4-6 pieces chicken (thighs and wings) with garlic in olive oil in a medium pot. Add slices of ginger, chopped onion, about 2 tbsp fish sauce. When the aroma fills your kitchen, add about 6 cups of water to make a broth. When the mixture is bubbling, add about 1 cup white rice. You may have to add some water as the rice and chicken mixture will absorb a lot of liquid. Simmer over low heat, stirring occasionally to prevent rice from sticking. When the rice is cooked, the mixture should have a creamy consistency like porridge. Add some lemon juice, salt and pepper to taste. Top with toasted garlic (oh, mama!) and sliced green onions.

"I love how these cute little hamburger cupcakes came out! Doesn't it make you want summer to come? They look like little sliders :)

Cupcakes are so wonderful and versatile, aren't they? These are vanilla cuppies with a chocolate cuppie in between, green coconut for the lettuce and frosting for the mustard and ketchup! I used a bit of fresh orange juice to brush the tops so the sesame seeds would stick!
